How do you change the "encoding" on iPod 30gig in order to get more hours of video downloaded?

Everyone keeps answering "what the the video capacity of an iPod 30gig", with "that depends on how you encode the video to the iPod". I've never seen any place to actually change the "encoding". Can you help me? Thank You So Much!
